Microsoft has released a whitepaper detailing how DPM 2010 can protect Exchange 2010. The whitepaper goes into detail about the whole process, right from installing DPM 2010, configuring it for Exchange, protecting & recovering data.
Note that DPM 2010 can protect Exchange 2003, 2007 & 2010.
